Tuscan Basted Eggs – slowly cooked eggs in extra virgin olive oil with capers and Parmesan. Don’t spare the truffle salt. It adds so much flavor.

NOTE FOR THE DAY: Anytime we talk about butter, just know we mean grass fed butter (Kerrygold or homemade) made from the milk from pastured, grass fed cows. Why? Because according to many, grass fed butter provides superior, healthy fats rich in CLA (conjugated linoleic acid-vital for good weight loss and metabolism), fat soluble Vitamins A, D, K and E, and free from added hormones, antibiotics, and chemicals. New studies show saturated fats are actually good for your body, and in a low carb keto diet, help shift cholesterol ratios toward the large, fluffy, beneficial type of cholesterol. Fluffy Chix love grass fed butter because it tastes amazing and makes us feel warm and “comforty.”

Sabatino Tartufi Truffle & Salt is Fluffy Chix favorite truffle salt brand. There is a lot of truffle and truffle flavor. (Click image to order from Fluffy Chix trusted Amazon Partner.)

We love this truffle salt. Use it on eggs, on low carb pasta, meats, seafood, and with veggies. It’s so versatile and gives great truffle flavor without the expense of buying truffles, which sell for hundreds of dollars each! It lasts a long time, since you don’t add a lot to any dish. We’re lucky, because our local grocer carries this truffle salt. Our Amazon partner actually offers this at a really good price!

  1. Susie,

What is the basic technique on the egg drop soup when you get to the adding eggs to the broth part. Not sure when or how much to stir when and/or after the broth swirl occurs! Have tried a couple of ways and the egg gets cooked, but my drop strings are all short and choppy. Not sure what I’m doing wrong. Regardless, I’ve made and eaten this soup several times this past week. It’s da bomb!!!

    Thanks and hugs,
    Alice

    • I just beat it up, make sure the soup is simmering softly. Stir a vortex or vornado into the soup and let it swirl. drizzle in the egg and let it swirl with the vortex. try not to stir again until egg has set.

      • It sounds like I’ve been stirring too soon. Many thanks, Susie!!

  2. Is it possible to make the cheese crackers with out a microwave? If so should it be done on the over or stove?

    • You can make grated cheese crackers on parchment in an oven. But you can’t make the Deli Deluxe crackers without a microwave. Sorry!

  3. did you a capers to the top photo of soft cooked eggs? it looks fantastic and usually my eggs look…well sort of dull
