Convenience, something that is often sacrificed when going ketogenic. Sometimes it feels like every meal must be eaten with a knife and fork. Make these ahead in bulk and wrap individually. Then when ready to eat that day, nuke it on high for 40 seconds and poof! Instant breakfast! They can even be individually frozen!

Ingredients
- 1 large egg, beaten until foamy with 1 teaspoon water
- 1/2 tablespoon bacon grease
- kosher salt
- fresh ground black pepper
- 1/2 ounce cheddar cheese, shredded
- 1 tortilla Psylli Wraps—Page 4 Almost Friendly--or Lo Lo Wrap
- 1 bacon slices, cooked until crispy
- 1 tablespoon picante sauce—or Easy Homemade Salsa
Variation (Optional)
- 1 ounce avocado, sliced (about 1/8 avocado)
Instructions
- Beat egg with 1 teaspoon water, until foamy and well-combined. Heat nonstick skillet with bacon grease over medium high heat. Add beaten eggs. Scramble eggs by scraping gently with a spatula until eggs are almost done. Season with kosher salt and fresh ground black pepper. Continue to cook to your preference. Top with shredded cheddar cheese.
- When egg is almost done, warm low carb Psylli Wrap with bacon in the microwave on high, for 10 seconds. Place egg in the wrap. Top with picante or your favorite low carb salsa. Enjoy!

Growing up in Texas, we wouldn’t know what to do with ourselves if at least 2 or 3 mornings each week, we didn’t start with a breakfast taco. In the early days of going low carb, t was one of the most limiting things about the ketogenic diet. What on earth would we do without tortillas and our beloved breakfast tacos?
Then, a friend of ours introduced us to her original recipe for low carb Psylli Wraps and the rest is history. We got our breakfast tacos back—this time, low carb and Atkins Induction friendly. No weird ingredients. No chemicals or soy…nothing but pure, real food! And we went to town Bubba Gump-ing the fillings as Texans are apt to do—being Texans.
There are so many derivations of low carb breakfast tacos, and thanks to low carb Psylli Wraps, they’re all possible. The Bacon Egg and Cheese Breakfast Taco is one of the original and basic version. Our favorites are actually slightly more exotic: barbacoa (made with luscious, slow braised, beef cheeks), fatty brisket (the point cut, aka “moist cut” or “fatty cut”), and barbecued pulled pork breakfast tacos—and don’t forget the bacon lamb egg and cheese!
