Keto Chocolate Cake

When Denny and I get down with dessert, we ideally look for two things…right after the expectation that it be low carb, keto-licious and diabetic friendly, of course: we want instant gratification (cuz we’re greedy like that); and we want portion control—no messy leftovers to lurk in DS9 (Deep Space 9 aka our chest freezer), calling temptingly in the night to come out for a little hanky panky.
Keto Chocolate Cake Mix satisfies all of the criteria we need to make this a low carb dessert rock star—at least in our book, and as you know, we have been known to toot our own horns. But even the carb monkeys in our house, adore Keto Chocolate Cake which is quickly thrown together once you have the cake mix made and stored. (BTW, you remember our “boys” don’t you? That the “boys” with their Aunt Khakki. She’d come to stay and take care of me after my second breast cancer reconstruction surgery. Khakki is one heck of a sissy, nurse and aunt! But I digress.)
Of course, the boys like their Keto Chocolate Cake with not-so-keto-ingredients like bananas mixed with keto-legal whipped cream and peanut butter and maybe an ant or two. We prefer our cakes in purist fashion: warm cakes topped with a big hunk of whipped cream and maybe a couple of raspberries on those puppies! Then color us in heaven!
Seriously. Try them! Heaven.

Seriously rich chocolate cake in less than 2 minutes. That's all that needs saying. Except, pass the whipped cream, please.
Serving Ideas Top with your favorite icing. We love simple whipped cream and a strawberry.

Ingredients
- 1 serving Keto Chocolate Cake Mix
- 2 tablespoons carton egg whites—or 1 large egg
- 1 tablespoon sour cream—or Greek yogurt
- 1/4-1/2 teaspoon vanilla extract, to taste
- 1/2 tablespoon unfiltered extra virgin olive oil (optional)
- 1 tablespoon water—or heavy cream, if needed
Instructions
- Stir all ingredients, except water, together using a spatula until evenly mixed. Mixture should be the consistency of cornbread batter. If batter is too thick, add water or cream, 1 tablespoon at a time.
- Spray 4oz ramekin or custard cup with olive oil. Microwave on high for 45 seconds to 1 minute. Remove cake from ramekin and cool on a wire rack. Frost or top with your favorite sugar free topping or icing and enjoy.

Hello Fluffys! What temp do you suggest to bake these in the oven ?
Try baking at 350° for between 8-12 minutes. I cook in the micro because they give the greatest rise. But let me know how it turns out, ok? Thanks

The hardest part is measuring out the dry ingredients but if you multiply the recipe, you can make one big dry batch and store it in a large ziploc for future chocolate cake whims satisfied in under a minute.
You my friend, are a culinary genius. This chocolate cake recipe, as well as the fluffy biscuit recipe are bonafide game changers. These are a wonderful and welcome addition to those days when Im just sick and tired of bacon, eggs, meat, vegetables and want something reminiscent of life before keto. This recipe satiates those kinds of cravings but in a responsible way.
